The Encore opens with an intense noseful of brown sugar, molasses, and a nostalgic hit of fresh-baked chocolate chip cookies with nuts. In the mouth, the wine delivers candied plums, dried figs and baking spices. The finish goes of for quite some time and delivers notes of brandied cherries and tobacco.

How City Winery Makes Wine

Step 1: Grape Selection

We carefully select vineyards around the world to supply grapes for our wines. Prior to harvest, we choose our preferred varietals with terroir, weather, and farming practices in mind. The grapes are picked at their peak, and then shipped to each of our local wineries for production.

Step 2: Crush and Maceration

Grapes are inspected carefully upon arrival at our wineries. If the fruit is approved by our local team, the grapes are then de-stemmed, sorted, and crushed on site.

Step 3: Aging in Barrels

After fermentation, the wine is put into barrels, and moved to a temperature controlled cellar to begin aging per the winemakers design. The typical aging process is 6-10 months, but some varieties are aged up to 24 months before bottling.

Step 4: Blend The Wine

After aging to the optimal condition, winemakers decide whether or not to blend multiple wines together in order to create the flavor profile they envisioned.

Step 5: Bottle, Cork, and Label

The finished wine is hand bottled, corked, and labeled

Step 6: Indulge Your Senses

The result is a thoughtfully crafted wine made with grapes from the best vineyards, and produced locally.
