The Encore opens with an intense noseful of brown sugar, molasses, and a nostalgic hit of fresh-baked chocolate chip cookies with nuts.  In the mouth, the wine delivers candied plums, dried figs and baking spices.  The finish goes of for quite some time and delivers notes of brandied cherries and tobacco.

Vineyard description

This wine was blended from different vineyards in California. California is the number one wine-grape growing state in the US. California’s is known for its mostly warm and dry climate which produces grapes and wines rich and bold in flavors.

Wine making Infofmation

This dessert wine was produced utilizing a traditional vin doux naturel process, the grapes for this wine were destemmed and crushed into an open top fermenter. After cold soaking for four days, the wine was allowed to begin fermenting naturally.  Once about ⅔ of the grapes’ natural sugar was fermented, we added grape spirits (grapa) to the fermenter full of grapes on skins.  Once the fermentation stopped, we pressed the grapes and aged the still sweet wine in French oak barrels for several years.  This version, “Solera #1”, is our first blend of three vintages - half the wine was bottled and half was put back into the barrel to get blended in next time.

Food Pairing

Dessert pairings are an easy win for this wine (flourless chocolate cake or baklava, for example).  Also try pairing this wine with smoked brisket or peppery barbeque for a fun pairing experience.  For a vegetarian twist, try stuffed mushrooms or eggplant curry.

We carefully select vineyards around the world to supply grapes for our wines. Prior to harvest, we choose our preferred varietals with terroir, weather, and farming practices in mind. The grapes are picked at their peak, and then shipped to each of our local wineries for production.
