On December 28, The Fab Faux play it front to back at City Winery NYC, and this bottle marks the night. The wine opens with ripe currant and juicy dark berries, followed by a touch of black licorice. It’s full-bodied and chewy on the palate, then settles into velvety cocoa, leather, and concentrated dark fruit. The finish is long and smooth, with a hint of sweetness. Like the album, it rewards patience and shows a little more with every pour. Made in limited quantities with original Fab Faux artwork, this is one of four bottles commemorating the residency. Collect the set, or open this one on a winter night with the record playing start to finish.

These grapes came in bursting with flavor! Destemmed and hand sorted, then fermented to dryness at moderate temperatures on skins, followed by full malo-lactic fermentation and barreled down with a combination of neutral French and American  oak. Just over 12 months on oak until it was released in bottle.

This wine is an easy stand alone as a cocktail wine to get the evening started. It would also pair well with root beer marinated pulled pork, chicken vindaloo or chicken scarpariello. Vegetarians can look toward morel mushrooms in a Sherry wine reduction.  For anyone with a sweet tooth, think of blackberry cobbler or coffee cake.
