Konocti, a dormant volcano that towers above the entire region, the Rooster Vineyard sits atop alluvial deposits at an altitude of 1,360 feet — perfect for growing a beautifully balanced Sauvignon Blanc with good maturation and minerality. The grapes are pressed very gently, keeping just juice from the heart of the cycle, then fermented 50 to 60 days in stainless steel tanks at very cool temperatures. Minimally aged and sent to bottle as fresh as possible. Opens with bright grassy and boxwood notes and a ripe passion fruit aroma, very crisp and bright with crunchy acidity, hints of fresh-cut bell pepper, and a long finish reminiscent of fresh squeezed lemonade.
