The blend of Macabeo, Xarel·lo and Parellada comes from vines planted in 1995 in limestone and sand over clay subsoil, where roots reach as deep as 30 feet for water. Those lean soils keep yields low and flavors concentrated, while warm days build ripeness and elevation preserves acidity. Like Champagne, this sparkling wine gets its bubbles from a second fermentation in the bottle, then rests 12 months on the lees, three months longer than Cava law requires. Expect bright, zesty citrus and fine bubbles that work as an aperitif on their own or alongside tapas and small plates, especially seafood.
