Wine making Info:
13 day maceration. Daily pumping over during 5 day cold soak, then punchdowns
twice daily through fermentation. Partial press blended back into free-run juice. Full
malolactic fermentation. Gravity pumped into a combination of 20% new Dargaud &
Jaegle and 80% used barrels from D&J and Seguin Moreau.
A warm ripe vintage has yielded a wine of cranberry red color and truly heady
aromatics. Lots of red rose and sour Morello cherry notes in the nose. The
mouth feeling is light and lithe with light acidity and medium tannins for a Pinot.
Expect more cherry flavor and perhaps a hint of the loamy earthy flavor reminiscent
of those alluvial river soils from this vineyard on the river. A fine example of our
Spring Street Pinot style.
Salmon on bed of cracked barley and pearl onions. Arctic char on creamed
