Vineyard description :Blend of two cabernets with a touch of syrah. Eight barrels of Cabernet Sauvignon Haystack Vineyard (in the Atlas Peak AVA in Napa Valley), two barrels of Lamonica Vineyard (Napa Valley) and one barrel of light-press Syrah from Alder Springs Vineyard to mellow the young tannins.
Winemaking Info : Twenty-one day fermentation in tank with pumping over twice a day, and press wine blended back into free-run wine. Full malolactic fermentation. Gravity pumped into a combination of two-year-old Seguin Moreau barrels and one-year-old Taransaud barrels and aged for 15 months.
Wine Description : Dark and concentrated yet elegant with aromas of ripe red fruit and note of vanilla and brioche . Lush and juicy mouth full with small dark berries flavor ending with notes of leather and pine needle.
Aging Capacity : 3-5 years.
Food Pairing : Beef Carpaccio, raw fatty tuna, smoked salmon.
