Winemaking Info : Twenty-one day fermentation in tank with pumping over twice a day, and press wine blended back into free-run wine. Full malolactic fermentation. Gravity pumped into a combination of two-year-old Seguin Moreau barrels and one-year-old Taransaud barrels and aged for 15 months.
Wine Description : This is a full-bodied 2010 Cabernet Sauvignon from Chile, and is derived from a Chilean red fruit with hints of spice. Powerful and youthful with an abundance of ripe red cherry.
Aging Capacity : 3-5 years.
Food Pairing : Beef Carpaccio, squab, raw fatty tuna, smoked salmon.
