Alder Springs is located in the cool Mendocino Valley above Sonoma in Northern California. The vineyard is a series of rolling hills and steep inclines at high altitude touching the eastern edge of the Coastal Range.

The wine making process included co-fermentation of Syrah and Viognier with 18 days Maceration in a open tank fermenter including 4 days of cold soak and 14 days of alcoholic fermentation. Three punch downs per day were performed during the maceration to gain a perfect extraction of all aromatics compounds. Then the free run was transferred in a combination of new and old French oak barrels for full malolactic fermentation and a aging of 18 months. Just one racking was done. No fining, no filtration and no sulfur was added from the grapes picking to the bottling.

The first expression of the nose is a mix of a bouquet garni and the forest floor aromas. Then the nose involve towards the dark forest fruits aromas like blackberries and black currant and a little nuance of liquorice. This wine offers a first palate of tapenade follow by the cassis flavor, a real savory sensation framed by medium acid and smooth tannins.
