Learn more about this

Alder Springs is located in the cool Mendocino Valley above Sonoma in Northern California. The vineyard is a series of rolling hills and steep inclines at high altitude touching the eastern edge of the Coastal Range.

Winemaking process includes hand grape picking with 18 days Maceration in a open tank fermenter including 4 days of a cold soak and 14 days of Alcoholic fermentation. Three punch downs per day are performed during the maceration to gain a perfect extraction of all aromatics compounds. Full malolactic fermentation is done with an aging in a combination of new and old French oak barrels to create a beautiful and opulent structure.

A subtle and complex nose of mint and spices opening into a more powerful aroma of blackberry to finish by delicate nuances of chocolate and forest floor. The palate is a full body and the balance is attractive with tannins and acidity working together for different level of the mouth filling. The after taste is a punch of dark fruit flavor with peppery note in the finish.
