This wine was made in 2 separate open tanks with a cold maceration of 5 days, follow by a 12 days of alcoholic fermentation. Daily punch downs were performed for a gentle and delicate extraction of the fruit. Then the 100% free-run juice was transferred by gravity into a combination of 30% new Dargaud & Jaegle and 70% used barrels from D&J and Seguin Moreau. Finally the full malotic fermentation took place and the wine aged for 16 months. The wine was racked twice before bottling without fining and filtration.

This young and juicy Pinot Noir delivers notes of ripe strawberries, raspberry coulis and fresh tart blackberries. Bright and aromatic with notes of hibiscus and violets. Silky but persistent tannins combined with refreshing acidity makes it a perfect accompaniment to food. Pair it roasted pork, wild mushrooms and simply prepared salmon filet.
