Wine Profile
The nose opens with notes of vanilla cookies, plums, olive tapenade and cured meats. In the mouth, we are greeted by rich blackberries and fruit leather, joined by a marinara-like medley of roasted tomatoes, fresh oregano, basil and olives. The mouthfeel is robust and chewy with great structure and moderate acidity. The finish is long and confectionary with loads of vanilla cookies, red raspberries and black currants.We can ship to all states except AL, AR, KY, MI, MS, SD, UT.
About the Vineyard
Home to volcanic soils thanks to the Mount Konocti, an ancient volcano in the area, Lake County is named for Clear Lake, which is one of the few natural lakes in California. Clear Lake is estimated to be around 480,000 years old. The red volcanic soils combined with the area’s high altitude yield wines with incredible concentration and intense flavors.Wine Making Process
Fully de-stemmed, the grapes for this wine were given a 2-day cold soak, then fermented on skins with daily pump-overs for a total of 19 days of maceration. After press, all free-run and press wine were combined, underwent full malo-lactic fermentation and allowed to age in “old” oak barrels for 2 years.Recommended Pairings
This wine will make a big splash when served with a charcuterie board. Pair this wine with thin crust margherita pizza, or a rabbit ragu. Also look towards ratatouille or poutine.
