Eli's Ridge Cabernet Sauvignon is a bold, complex wine that showcases the intensity and depth of its high-altitude, volcanic terroir, with rich dark fruit flavors, fine tannins, and a balanced, lingering finish. Sourced from 2,400 feet in the Red Hills AVA, the fruit was hand-harvested, fermented on skins for 24 days, and aged for 23 months in French and American oak to build structure and depth. Layers of blackberry, blueberry, dark chocolate, and leather unfold across a full-bodied palate, with firm tannins and a long, polished finish.

Deep, dark garnet with purple hues, this wine displays rich color in the glass, leading you into a layered floral bouquet of violets and blackcurrants. The notes of dark chocolate suggest well-integrated oak influence.The wine opens on the palate with an intense burst of  dark chocolate, leather, ripe blueberry and bruleed blackberry. The tannins are firm but refined, providing structure without being overpowering. The mid-palate reveals subtle spice, with hints of anise. The acidity is balanced, lifting the fruit and providing freshness, while the finish is long and smooth, with lingering notes of black fruit and dark chocolate.

About The Eli's Ridge Vineyard

Eli's Ridge’s vineyard block within Obsidian Ridge Vineyard sits at 2,400 feet in the Red Hills AVA, benefiting from the volcanic soils and steep slopes of this high-altitude site. The block's rocky, well-drained rich volcanic ash, stress the vines, resulting in small, concentrated berries with intense flavor. Excellent sunlight exposure and natural airflow, allow the vines to experience a long, even growing season. These conditions produce a Cabernet Sauvignon with deep fruit flavors, and a remarkable balance of richness and acidity, highlighting the vineyard’s commitment to crafting world-class, terroir-driven wines.

About The Winemaking - 2022 Cabernet Sauvignon Cuvée Eli

Harvested and sorted by hand, the fruit was fully destemmed, fermented warm, remaining on skins for 24 days, aiding tannin and color extraction. Post fermentation, Cuvée Eli went through complete malo-lactic fermentation in barrel. A blend of French and American oak, 23 months in barrel.
