The wine opens with delicate nose, full of ripe green apples and orange blossoms, woven with hints of lime/lemon and apricot. On the palate, the wine is very mellow, with good weight and a certain elegance. The experience is capped off by a super clean, mineral finish. This wine is approachable and food friendly.
About The Vineyard
This vineyard owes more than just its signature views to Seneca Lake, as the vines come from Hermann Wiemer, one of the area's most prominent Riesling producers. With plantings extending to the shore, the moderating effects of the 600-foot deep lake create a macro-climate similar to Alsace. Pinot Blanc is a mutation of Pinot Noir that grows yellow grapes instead of purple.
6 week fermentation at cold temperature in stainless steel tank follow by aging on fine lees with regular battonage to ensure a rich mouthfeel.
This wine is just begging for cheese. It would pair nicely with a rich, creamy mac and cheese. If you’re feeling adventurous, try this wine with apple slices covered in baked brie and honey. This wine would also be at home with a blackened chicken caesar salad or some sriracha-lime shrimp skewers.
"Very mellow, with good weight and elegance."
