Wine Profile

Aromatically, the wine calls to mind snacks in grandpa’s easy chair, with notes of leather and cigar box, followed by big black cherries, blackberry jam and subtle hints of brown spice. In the mouth, the wine follows through with fine grained tannins with good weight and some fresh herbal notes (sage) on the palate. The finish puts a bow on things with vanilla and blueberries.

About The Vineyard

Home to volcanic soils, thanks to the Mount Konocti, an ancient volcano in the area, Lake County is named for Clear Lake, which is one of the few natural lakes in California. Clear Lake is estimated to be around 480,000 years old. The red volcanic soils, combined with the area’s high altitude yields wines with incredible concentration and intense flavors.

Winemaking Process

Fully destemmed, the grapes for this wine were given a 2 day cold soak, then fermented on skins with daily pump-overs, for a total of 19 days maceration. After press, all free-run and press wine were combined, underwent full malolactic fermentation and allowed to age in “old” oak barrels for 2 years.

Pair this wine with thin crust margherita pizza, or a rabbit ragu. Also look towards ratatouille or poutine. For the more desert-minded, try pairing this wine with dark chocolate

How City Winery Makes Wine

Step 1
Grapes
We contract carefully selected vineyards to supply grapes. Prior to harvest we choose our preferred varietals and make shipping arrangements.
Step 2
Crush and Maceration
Grapes are inspected upon arrival and if approved, de stemmed, sorted, and finally crushed.
Step 3
Aging
After fermentation the wine is barreled into the cellar to begin aging per the winemakers design. Typical aging is 6-10 months but options exist for aging up to 24 months.
Step 4
Blending
After the wine has aged to its optimal condition, our winemakers further refine the wine by blending it with other wines if desired.
Step 6
Labeling
The finished wine is hand bottled, corked, and labeled.
