Dark and brooding, this wine has earthy aromas of forest floor and baking chocolate. On the palate the chocolate becomes more pronounced and is joined by black currant and elderberry. As the wine opens up, notes of baking spice appear and develop into deep herbal/woody character and a savory finish. Decant assertively.
About The Vineyard
Alder Springs is located in the cool Mendocino Valley above Sonoma in Northern California. The vineyard is a series of rolling hills and steep inclines at high altitude touching the eastern edge of the Coastal Range.
All of our Au Naturel wines are made with an eye toward using minimal intervention and the most natural winemaking techniques possible. For this Cab Franc, we utilize an extended maceration, with a total of 30 days on skins with a mix of pump-overs and punch downs by hand. For this wine, the press fraction and free run were combined and aged in barrels for 12 months. After full malo-lactic fermentation, the wine was bottled without fining or filtration.
This is a wine could hold up to a robust cigar or aged hard cheese. Strongly flavored dishes, such as game meats (venison, rabbit stew) will fare best.
